Stuffed Pork Chops

My husband, Steven, has been talking about some cheese stuffed pork chops he had about a decade ago. Yes, I married a man who has food obsessions. Thankfully, his food obsessions go well with mine. Our tech obsessions pair up nicely as well.
I know I am a geek because I remember (fondly) my first computer, an Apple IIe. I have always been an Apple girl; I had to convert my husband. He was a Microsoft developer. Now he is an open source guy and our house is filled with Mac products and food. It is a nice combination.
Now back to the pork chops. I decided to make stuffed pork chops for his 40th birthday. I bought him an Apple LED Cinema Display as well. I didn't ask him if he preferred the monitor or the pork chops. I'm not stupid.

Stuffed Pork Chops
4 Slices (120 g) of Bread
2 Tbsp of Fresh Sage, Chopped
1 Tsp of Pepper
1/2 Tsp of Salt
1/2  Cup (100 g)  Monetery Jack Cheese, Shredded
1/2 Cup (100 g)  Mozzarella Cheese, Shredded
3 Cloves of Garlic
1 Egg
4 Pork Chops

Preheat over to 325F/162 C/Gas Mark 3. Combine all of the ingredients except the pork chops in a food processor.

Cut a small pocket in each pork chop and fill with the breading.

Put any remaining breading between the pork chops and bake for 40  minutes or until the internal temperature is 150F.

 Then sear the pork chops 2 minutes on each side. Serve.

The bottom line: Will I make this again? Yes, they were amazing! Incredible even. Steven loved them and so did I. Katie wanted fried pork chops but it wasn't her birthday.
